Breakfast
As a vegetarian, there are not always a lot of good options for meals. As a parent, time is my starkest constraint. I tend to eat the same meals at the same restaurants, because I don’t have too many options and I don’t want to risk a bad meal. This meal option below might not be applicable to everyone, but it applies to me.
These are egg whites scrambled with red onions, one egg over easy, toast and coffee, with spicy sauce, from the Kaiser Terra Linda cafe. Greg is the proprietor and he gets this simple meal right every time. The egg whites absorb the freshness of the red onion and the deep heat of the spicy sauce. The fried egg is crispy at the white margins and runny on the yolk and captures salt as it is in turn drawn into the sourdough toast.
None of this food has ever been frozen and I’m not sure Greg has a freezer. Even the spicy sauce is made from scratch with cilantro and Serrano peppers. The best part of the weekend winding down is that I know I’m going to eat this Monday morning.
So, if you’re in Terra Linda, San Rafael on a weekday and want a great breakfast, come the Kaiser Hospital between 8-10:30 AM
